The smoothing settings are applied immediately to the loaded profile. No need to roast anything. Profiles store the data in raw format as received from the device. All computations to render the data on the screen are applied during redraw.

Yes. Just ‘roast’ without beans and play with energy supply and airflow to create a BT curve more or less similar to the one you aim for.

>From the graphs you post it seems that your probe is catching more noise than you want to have and earlier, the hardware and software version you used more or less smoothed this out. You could add back that smoothing in Artisan on one end or improve the reading on the other extreme end by using a heavier / thicker probe, for instance.
